Black Bean Burgers

Ingredients

  • 3 cups black beans, cooked
  • 1 cup cooked whole grain brown rice
  • 1 medium carrot, shredded
  • 1/3 cup ground flaxseed
  • 1 large free range egg
  • 1 garlic clove, minced
  • 2 teas grainy Dijon mustard
  • 1 teas cumin
  • 1/2 teas sea salt
  • 1/4 teas black pepper

Guacamole

  • 1 clove garlic, minced
  • 1 large avocado
  • juice of 1/2 lime
  • 2 tbls finely chopped cilantro
  • 1/8 teas cayenne
  • 1 medium tomatoe, seeded and chopped

Directions

  1. Mash black beans or place in food processor until broken down but not completely smooth. Add the rice, carrot, flaxseed, egg, salt and pepper. Pulse until combined. Form into patties.
  2. Grill or pan fry in a bit of olive oil.
  3. To make guacamole mash all ingredients in a small bowl just before serving. Avocado will turn dark if left to sit too long.

Serving Suggestions:
These burgers can be served with or without a bun topped with the guacamole.

Optional:
These burgers freeze well. If freezing we would do so uncooked and plan to pan fry or grill at a later time.

If you are serving these burgers without the guacamole we would add some fresh minced cilantro to the burgers.

Also if you are lucky enough to have Vietnamese coriander in your garden, we use it instead of cilantro.

If you are using canned black beans we suggest the blue menu “no salt added” black beans from Superstore.
