Ingredients
- 2 cups flour(spelt and/or barley)
- 1/2 cup oats
- 1/2 cup cornmeal
- 2 teas ginger
- 1 teas baking soda
- 1 teas baking powder
- 1 1/2 cups plain yogurt
- 1/3 cup honey
- 1/3 cup olive oil
- 1 egg
- 1 1/2 cups frozen blueberries
Directions
- In a large bowl combine dry ingredients.
- In another bowl combine wet ingredients.
- Add wet to dry.
- Stir until just moistened and stir in frozen blueberries.
- Fill 12 muffin cups.
- Bake 375F for 12-15 minutes or until tops spring back lightly when touched.
