Blueberry Ginger Muffins

Ingredients

  • 2 cups flour(spelt and/or barley)
  • 1/2 cup oats
  • 1/2 cup cornmeal
  • 2 teas ginger
  • 1 teas baking soda
  • 1 teas baking powder
  • 1 1/2 cups plain yogurt
  • 1/3 cup honey
  • 1/3 cup olive oil
  • 1 egg
  • 1 1/2 cups frozen blueberries

Directions

  1. In a large bowl combine dry ingredients.
  2. In another bowl combine wet ingredients.
  3. Add wet to dry.
  4. Stir until just moistened and stir in frozen blueberries.
  5. Fill 12 muffin cups.
  6. Bake 375F for 12-15 minutes or until tops spring back lightly when touched.
