Broccoli Slaw
I was having one of those days when I wanted a quick and easy salad but couldn’t bear to eat any more lettuce. I was in the produce section of the grocery store when I saw a bag of broccoli slaw. We are not fans of bottled salad dressings so I tossed together another slaw recipe dressing and “voila” Broccoli Slaw was born.
Ingredients
- 12oz/340g bag broccoli slaw
 - 1/4 cup raisins and/or dried cranberries
 - 1/4 cup chopped walnuts and/or pecans
 - 1 diced apple, dipped in lemon juice
 - 1 green onion (green part only)
 
Dressing
- 1/2 cup plain yogurt or Hellmann’s Light Olive Oil Mayonaisse
 - 1 tbls honey
 - 1 tbls white vinegar
 - 1 tbls lemon juice
 - 1 green onion bulb
 
Directions
- Mix dressing ingredients in blender.
 - Toss with salad and enjoy.
 
Serving Suggestions:
This makes a large salad. If you don’t think you can eat it all in one day I would make the dressing and use half of it  and half of the salad ingredients and a couple of days later make it again. If you use Miracle Whip instead of Hellmann’s you could eliminate the lemon juice in the dressing.
