Christmas Salad
I found this recipe at a local grocery store who runs cooking classes. I took liberties with the ingredients and made it my own. It is a perfect combination of red and green for the holidays and the fresh thyme is reminiscent of turkey dinner.
Dressing
- 2 tbls cranberry sauce
- 1 teas fresh thyme
- 1 tbls honey
- 1 small clove of garlic, chopped
- 1 tbls red wine vinegar
- 1 1/2 teas balsamic vinegar
- 2 tbls olive oil
- fresh ground pepper to taste
Salad
- 1 package of mixed salad greens
- 1/2 cup alfalfa sprouts
- 1/4 cup dried cranberries
- 1/4 cup walnuts, chopped
Directions
- To make salad dressing combine everything in a small food processor except the olive oil. With motor running on low speed drizzle in olive oil.
- Put salad greens, sprouts, cranberries and walnuts in a salad bowl and either toss with dressing just before serving or serve the dressing on the side.
Other festive additions could be red and green peppers, green onions, broccoli, etc.
