Christmas Salad

I found this recipe at a local grocery store who runs cooking classes. I took liberties with the ingredients and made it my own.  It is a perfect combination of red and green for the holidays and the fresh thyme  is reminiscent of  turkey dinner.

Dressing

  • 2 tbls cranberry sauce
  • 1 teas fresh thyme
  • 1 tbls honey
  • 1 small clove of garlic, chopped
  • 1 tbls red wine vinegar
  • 1 1/2 teas balsamic vinegar
  • 2 tbls olive oil
  • fresh ground pepper to taste

Salad

  • 1 package of mixed salad greens
  • 1/2 cup alfalfa sprouts
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, chopped

Directions

  1. To make salad dressing combine everything in a small food processor except the olive oil.  With motor running on low speed drizzle in olive oil.
  2. Put salad greens, sprouts, cranberries and walnuts in a salad bowl and either toss with dressing just before serving or serve the dressing on the side.

Other festive additions could be red and green peppers, green onions, broccoli, etc.
