Gingerbread Pudding Cake

Ingredients

  • 1 1/4 cups flour
  • 1 teas ginger
  • 3/4 teas baking soda
  • 1/2 teas cinnamon
  • 1/4 teas nutmeg
  • 1/4 teas allspice
  • 1/4 teas cloves
  • 1/4 teas salt
  • 1/4 cup margarine
  • 1/4 cup sugar
  • 1 egg or egg replacer
  • 1/2 cup molasses
  • 1/2 cup warm water
  • 3/4 cup brown sugar
  • 1 1/2 cups hot water
  • 5 tbls margarine

Directions

  1. Preheat oven to 350 F. Grease an 8 X 8 baking dish.
  2. Beat butter and sugar until well combined,
  3. Combine flour, ginger, baking soda, cinnamon, nutmeg, allspice, cloves and salt in another bowl.
  4. Combine molasses and warm water together in another bowl.
  5. Mix flour mixture into margarine mixture alternately with the molasses mixture mixing well. Transfer to prepared baking dish and sprinkle the top with the brown sugar.
  6. Combine 1 1/2 cups hot water and the 5 tbls of margarine in a glass measuring cup and carefully pour over the batter.
  7. Bake 35-40 min, until top is crackled looking. Remove from oven and let cool at least 15 min.
