Potato Salad
I am sure I am in the minority when I make this statement but “I don’t like Miracle Whip”. It was always the problem I had with potato salad so I worked on an alternative and this is what I came up with. I usually add other ingredients to the salad like diced celery, carrot, apple or fresh peas.
Ingredients
- 2 lbs of potatoes (yukon gold or other waxy potato)
- 6 eggs
- 1/4 cup diced onion
Dressing
- 1/4 cup Hellmann’s olive oil mayonnaise
- 1 tbls honey
- 1 tbls whole grain dijon mustard
- 1 tbls rice vinegar or lemon juice
Directions
- Dice, cook and cool potatoes. Hard boil and cool eggs.
- Combine dressing ingredients in a small bowl.
- Combine the dressing with the potatoes, eggs and onions.
Comments:
Can be doubled for large crowds.
