Sausage Frittata
Ingredients
- 2 hot Italian sausages, sliced thinly
- 1 tbls oive oil
- 1 small onion
- 1 cup grape tomatoes
- 1 potatoe, peeled & diced
- 6 eggs
- 1/4 teas salt & pepper
- 1/8 teas nutmeg
- 1/4 cup baby spinach, chopped
- 1 green onion
- 1/2 cup cheese, mozzarella
Directions
- Brown sausages in an oven proof skillet.
- Remove to drain on paper towel. Drain fat from pan.
- Return pan to stove and add potatoes cooking for about 5 minutes.
- Add onions and tomatoes and cook until onions are translucent and potatoes are cooked.
- In a bowl, whisk eggs with salt& pepper and nutmeg. Stir in spinach and green onion.
- Return sausage to pan and pour eggs mixture into skillet. Sprinkle with cheese.
- Bake in a 350F oven for about 10 minutes or until eggs are done.
