What is a peel? A peel is a shovel-like tool used by bakers to slide loaves of bread, pizzas, pastries, and other baked goods in and out of an oven. It is used to transfer the dough to the baking stone and to remove it from the oven to a cutting surface.

Using a ‘jerking’ motion, the dough is slid onto the baking stone. A similar motion, though reverse, is used to get the baked item back onto the peel. This is the art of the peel!

Prior to use, the peel is sprinkled with cornmeal, flour or wheat bran, to allow the baked goods to easily slide on and off. To avoid sticking, the dough should not rest on the prepared peel for long periods of time.

How To Use and Maintain Your Pizza Peel

Your peel has been finished with a generous coating of food safe mineral oil. You should occasionally wipe your peel with a little food safe mineral oil to renew the finish. Do not cut on the peel.

To clean your peel just wipe it with a damp cloth. Do not immerse it in water or the dishwasher!

If your peel becomes bowed from leaving hot pizza on it simply lay it upside down on a flat surface overnight.
