Asian Broccoli Ginger Salad
This salad is a refreshing change from the traditional broccoli salad with mayo.  I find it is closer to a slaw than a salad.
Dressing
- 1 small clove of garlic, minced
 - 2 teas fresh ginger, grated
 - 1 teas grainy dijon mustard
 - 2 tbls honey
 - 2 tbls braggs or tamari
 - 1 teas fish sauce
 - 1/2 cup olive oil
 - 1/2 teas pepper
 
Salad
- 2 cups broccoli florets
 - 1/2 cup carrots, julienned
 - 1/2 cup red cabbage, shredded
 - 1 green onion, chopped into 1/2″ sections
 - 1/4 cup peanuts
 - 2 teas black or white sesame seeds for garnish
 
Directions
- Combine all dressing ingredients in a jar with a tight fitting lid and shake well
 - In a large bowl combine the broccoli, carrots, cabbage and onions. Add dressing and toss well.
 - Heat a small fry pan and toast the peanuts and sesame seeds separately. Cool on plate and then sprinkle over the top of the salad.
 
Comments
If you find yourself in a bit of a rush try the bagged broccoli slaw in the produce section of your local supermarket. I also find there is enough dressing for two salads or double the Salad ingredients.
