Fish Dinner
This is the secret recipe to get your kids to eat fish, provided they like scalloped potatoes. I usually toss in a variety of frozen vegetables with the fish which adds to the visual appeal and helps to further disguise the fish.
Ingredients
- 1/2 cup sliced toasted almonds(optional)
- 1 cup grated cheese
- 1 med onion, sliced
- 4 medium red potatoes, sliced, rinsed and drained
- 1 to 1 1/2 lbs haddock
- 1/4 cup butter
- 1/4 cup flour
- 1/2 teas salt
- 1/4 teas pepper
- 1 1/2 cups milk
- frozen vegetables
Directions
- Cut fish into 1″ pieces and place in bottom of a greased 7″x 11″ pan(lasagna pan). Add frozen vegetables.
- Heat the butter in a saucepan and add onions cooking until transparent. Blend in flour, salt and pepper and stir a minute to cook flour. Add milk stirring constantly. Bring to a boil, turn down heat and stir until mixture thickens. Pour some of the sauce over the fish.
- Layer the potatoes, cheese and sauce.
- Sprinkle with toasted almonds(if using)
- Bake at 375F for about 1 hour. Let cool about 10 minutes then serve.
Suggestions:
I slice the potatoes and the onions in the food processor. I rinse the potatoes in a colander under cold water to remove excess starch and drain them on tea towels.
