Fresh Pasta
Ingredients
- 4 eggs
- salt
- 2 cups flour
- Pasta machine (Optional)
Directions
- Put flour on a clean counter.
- Create a depression in the center of the flour, sprinkle with salt.
- Add eggs to depression and mix into flour.
- Mix until it forms a dough.
- Knead for about 10 minutes.
- Pull off a small piece of dough the size of a small orange.
- Feed dough through the roller on the pasta machine starting with the widest setting and working your way to
- thinest setting.
- Cut into desired noodle shapes.
- Let dry 15 min
Serving Suggestions:
Fill a large pot with water. Add 1 1/2 tbls salt. Bring to a rolling boil. Drop in fresh pasta and cook until el dente, stirring frequently. Drain and top with olive oil or add to prepared sauce.
Optional:
1/2 cup flour to each egg
